Check the Content Maps in the Smart Search back-end.
From there you can define the filters and their values shown in the Advanced Search form.
If you want to filter using custom fields, you have to enable the related setting named "Search Index", which can be found under the "Options" tab in the Custom Field's page. Do note: You have to re-index your content after such changes.
For filtering you can also use an extension like https://extensions.joomla.org/extension/jfilters/ which work fluently with the Smart Search.
